Drops of oil a few microns in diameter in size are located in the cells of the pulp of the fruit in a cavity called vacuoles. The different mechanical interventions necessary for the extraction of the oil objective is to tear apart the oil bearing cells to allow the drops of oil to run out from the vacuole and to easily form an oily phase that is able to separate from the water in the fruit.
